2-pound bottom round or rump roast
Juie of one lemon
1 oven cooking bag
2 onions, sliced
8 baby carrots
2 medium potatoes, quartered
4 stalks celery
1 clove garlic
1 t dry mustard
1 t thyme
2 cups tomato juice
Preheat oven to 350
Sprinkle beef with lemon juice and pierce with fork.
Prepare beef in bag according to directions. Add carrots, onions, celery, potatoes.
add thyme, garlic, mustard. Pout to,ago juice around beef in bag. Seal bag, cut slits roast for one hour
Remove from bag and let stand five minutes. Cut into thin slices. Enjoy!
