Another non-ultraprocessed experiement. Yummy no-bake treat to take camping, cycling, wherever.
1-1/2 cups smooth peanut butter
1 cup honey
2 teaspoons vanilla extract
4 cups quick oats (DO NOT USE ROLLED OATS. Also do not use steel cut oats. They make this “treat” inedible.
2 cups Rice Krispies
1 teaspoon cinammon
2 cups miniature chocolate chips (or regular)
Line a 13×9 baking pan with parchment or foil
stir together the oats, Rick Krispies, and cinnamon
In a large saucepan, add peanut butter, and honey and heat on low until the peanut butter is runny and mixes easily with the honey. Stir in the vanilla. Don’t get the mixture too hot or it will melt the chocolate chips.
Fold in the oats mixture until evenly coated. Use your hands to mix everything evenly. Fold in the chocolate chips. Don’t worry if they melt a little.
Press the mixture firmly into the prepared pan, then press the remaining chocolate chips on top. Cover and refrigerate for at least 2-3 hours before cutting into bars.
