Joan’s Savory Meatballs

Savory Dave

1/2 lb chopped beef
1/2 lb chopped pork
1/2 cup Italian bread crumbs softened with cream or half and half (should be mushy)
1 egg
1 tsp salt
1 tsp pepper
(2 cloves chopped garlic)
1/2 Romano cheese (I used Parmesan)
1 tbsp oregano (I never, ever use oregano. In anything. My “special” Jersey Mike’s order is Mike’s way without oregano.)
1/2 cup pine nuts

Mix all ingredients with hands and shape into tiny balls.
Bake at 350 for 5 minutes. Turn and bake 3 more minutes. Do not overcook; they will cook more in sauce.

Sauce
2 cans San Marzano plum tomatoes
1 can tomato paste
2 cloves garlic, minced
1/4 cup olive oil
1/2 tsp salt
1/2 tsp pepper

Once the sauce is all nice and bubbly, throw in meatballs and simmer for about 1/2 an hour, stirring occasionally.
