Plant based hearts of palm ceviche for you unfortunate souls who are allergic to shrimp

2 20oz cans hearts of palm (Native Forest Organic are yummy and do not harm the rainforest)
4 medium tomatoes chopped
1 red onion, chopped fine
4 jalepeños deseeded + finely chopped
1 red bell pepper
1 yellow bell pepper
2 small cucumbers
1 bunch cilantro
2 avocados
4 limes
1 tbsp olive oil
salt and pepper to taste
tortilla chips or salad for serving

Instructions

Drain the water from the hearts of palm and chop it into large chunks. In a medium bowl combine the hearts of palm with the remaining ingredients.

Serve with avocado and chips or as a salad.

* will keep 4-5 days in the fridge
