1 pound ground elk meat
1/2 cup ketchup
1/2 cup spicy brown mustard (or spicy honey mustard, or dijon, or Durkee’s Famous Sauce)
1T Worcestershire sauce
1T apple cider vinegar
BBQ sauce
cayenne pepper
Brown elk in medium skillet. Add remaining ingredients and simmer for 15-20 minutes. You will probably need to add more ketchup and mustard but I find it’s best to start with a little rather than end up with too much. I serve the meat on Kaiser rolls; they are just so much better than hamburger buns in my opinion.
