Blooming Grove is an old hunting and fishing club in Pike County, Pennsylvania. My husband used to go there as a kid, and strangely our catchatarian friend we met here in Colorado also used to go there. 8 small white potatoes, cut crosswise into 1/4″ slices
1 sweet onion, halved cut pole to pole into 1/4″ slices
2 Tbsp. olive oil
Salt and Cayenne Pepper
4 Tbsp. butter
Parsley
Heat a large frying pan (preferably a cast iron skillet) over medium heat and add 2T butter. Add the potatoes to the pan and salt to taste.
Saute the potatoes for about 30 minutes until they get soft.
Add the remaining butter to the frying pan and then the onions. Continue to cook until the onions are translucent, even caramelized if possible. Add cayenne pepper to taste.
Garnish with chopped parsley before serving.
