JB will eat almost any soup you put in front of him, but he especially loves all manner of chicken noodle soup. I make Mother Marie’s chicken pot pie all the time but I try to mix it up a little…this soup is a result of that.
32 oz. organic chicken broth
1 pkg udon noodles
2 carrots, sliced thin
Baby Bella mushrooms, sliced (5 or so)
Bok choy ( I actually grew it on my desk this winter)
Shredded cooked chicken breast
I had to add some bouillon because the noodles got big and starchy, and I think you could add tamari or soy sauce for a little more Asian flavor. You could also boil the noodles separately and drain them then add to the broth to try to make them less starchy.
