Edamame salad

Salad
1 bag frozen edamame – shelled
2 handfuls broccoli slaw
1 cup sprouted grains – by alfalfa sprouts at grocer
1/4 cup sunflower seeds
2 cups seedless grapes – halved
1 apple peeled and cored – diced

Vinaigrette
1T toasted sesame oil
1T pre-made vinaigrette
Dash Bragg’s/soy sauce
Salt and pepper

Hearts of Palm Salad

1 can hearts of palm
5 oz. cherub tomatoes (about half the package)
2 cups baby spinach
1/2 cup kalamata olives (optional)
fresh grated parmesan cheese to taste
Balsamic vinaigrette salad

Slice hearts of palm and tomatoes. Tear stems off spinach. Combine ingredients in a bowl, cover, and refrigerate.

Avocado and Tomato Salad

4 avocados, peeled and cut into 16ths
1 sweet onion, slice thinly
1 package grape tomatoes, cut in half

Dressing
1 clove garlic, crushed
1T chopped basil
1t Worcestershire sauce
2T extra virgin olive oil
salt and pepper to taste

Pennsylvania Dutch Potato Salad

8 medium white potatoes, peeled and diced

2 sticks celery, very thinly sliced

4 hard boiled eggs, cut up

1 yellow onion, finely minced

Dressing:

2T Miracle Whip

2T Hellman’s or Best Foods Mayo

6T vegetable oil

4T cider vinegar

1t celery seed

Boil potatoes about 10 minutes or until soft. Drain, then add other ingredients. Toss with dressing and chill.
